This cocoa is like a latte minus the coffee which makes it the perfect drink to serve on a chilly winter night. We love this recipe (makes enough for 2 mugs) because it’s made with homemade almond milk (you don’t have to do this step!), it’s vegan and you don’t even need a steamer machine!

I make this recipe for my family every Christmas and it is always such a treat. I like to make the almond milk myself from scratch but it works just as well with store bought milk.

  • 12 cup blanched and soaked overnight (6-8 hrs) almonds
  • 2 cup water
  • 1 tsp honey
  • 12 tsp ground cinnamon
  • 12 ground ginger
  • 12 tsp freshly grated nutmeg
  • 12 tsp vanilla pod


Soak almonds for 6-8 hours overnight in filtered water. This process is absolutely essential to soften the nuts. It also unlocks even more nutrition!

After soaking, drain the nuts, rinse and discard the leftover water.

Add the almonds to a blender with 3 cups of fresh filtered water and blend on high for a minute or two until smooth and creamy. If you like your milk a little runnier add more filtered water until it is the desired consistency. The milk comes out very smooth so you won’t need to strain it but you definitely could if you are looking for a super smooth milk.

Combine the almond milk with honey, spiced and vanilla in a small saucepan and heat gently while mixing until heated thoroughly.

Serve in mugs with an extra sprinkle of fresh nutmeg and a stick of cinnamon.
