sugar-free ginger brownies

  • 4 large egg whites
  • 1 cup chopped dates
  • 2 tsp peanut butter
  • 13 cup melted coconut oil
  • 12 cup ground almonds
  • 34 cup cacao powder
  • 12 tsp baking powder
  • 12 tsp ground ginger
  • 14 tsp sea salt


Place dates in a bowl filled with water and soak for 1 hour. Then, rinse and drain.

Preheat oven to 375 degrees Farenheit and prepare a square baking dish by greasing with coconut oil, or line with parchment paper.

Put ingredients in a blender and blend on high for one minute, then scrape down the sides so you don’t miss out on any yummy goodness! Then process on high for another minute or two until creamy.

Transfer the batter into the prepared baking dish then make sure it’s smooth. Bake for 18 minutes or until a toothpick can be inserted and removed clean.

Cool brownies in the pan for at least an hour before slicing into 12 sections.
Sprinkle the brownies with extra ginger if you want a little bit of a ginger twist. If not, enjoy!
