pumpkin spice hot cocoa

We are in full-blown Holiday mode, and if you’re anything like me, the pull of fall and holiday magic is strong for a girl. Grocery stores have me right where they want me because as soon as I see those giant cans of pumpkin puree on display with gold, red, and orange paper leaves on an end cap, I get excited and I buy nine (or ten…or twelve) immediately. But then I have no idea what to do with all the cans aside from like, build a fort for my dog (side note: she loved it…so did I). I decided to find new ways to use up that pumpkin puree outside of pies.

pumpkin cocoa

ingredients

  • 2 cup milk
  • 4 tbsp pumpkin puree
  • 14 cup white chocolate
  • 1 tsp vanilla
  • 15 tsp cardamon
  • 14 tsp nutmeg
  • 14 tsp cinnamon
  • 1 tsp orange zest
  • 1 dollop whipped cream

instructions

In a saucepan over medium heat, combine milk and pumpkin puree and whisk until the milk is almost simmering. You might see a few tiny bubbles around the edge. That’s your cue to take it off the heat.

Add the white chocolate and whisk it vigorously while thinking about the last time someone wronged you (it helps keep up momentum! And get your ya-yas out.) until the chocolate is melted or until the powder is dissolved. When smooth, add vanilla and spices and top with orange zest.

Dollop with homemade whipped cream or a dash of adult cheer (if you know what I mean) and enjoy with friends so they can tell you how delicious it tastes… Or with the company of your dog, The Great British Baking Show on Netflix and the satisfaction that you made something yummy!
