ingredients

  • 14 cup graze chia seeds
  • 12 cup unsweetened almond milk
  • 12 cup pure pumpkin puree
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 14 cup greek yoghurt
  • 2 tbsp almond butter

instructions

Mix together the almond milk, pumpkin, maple syrup and vanilla extract. Slowly add the spices and chia seeds and mix well. Refrigerate the pudding mixture for 6-8 hours or leave in the fridge overnight.

Stir the chia pudding together to remove any clumps and scoop a quarter of the mixture into a small bowl. (Chia pudding will stay for several days so save the rest for later!) Melt the the maple almond butter in a mug for 30 seconds. Stir well and microwave for another 30 seconds. Repeat until smooth.

Dollop a scoop of Greek yogurt on top of the chia pudding, then drizzle the melted almond butter on top. Finish with a dash of cinnamon, a few pumpkin spice flapjacks and enjoy!
