protein-packed vegetarian chili

Some chili recipes have loads of sugar or fatty meat but this healthy, hearty vegetarian recipe will satisfy both vegetarians and carnivores at your Super Bowl party this year!

protein-packed vegetarian chili

ingredients

  • 2 tsp vegetable oil
  • 2 tsp minced garlic
  • 4 tsp chilli powder
  • 1 tsp cumin
  • 1512 oz drained cannellini beans
  • 1512 oz drained red kidney beans
  • 1512 oz drained chickpeas
  • 2 whole tomatoes
  • 1512 oz undrained and chopped stewed tomatoes
  • 14 cup greek yoghurt
  • 14 cup shredded 4-cheese blend
  • 15 cup chopped green onions

instructions

Heat oil in a large saucepan over medium heat, add garlic and sauteé for about 1 minute.

Stir in the chili powder, cumin, all three types of beans, diced tomatoes, and stewed tomatoes and bring to a boil.

Once boiling, reduce to a simmer and cook for about 15 minutes.

Serve soup to taste with a dollop of yogurt, sprinkled cheese and sprinkled green onion on top.

Optional: Add some flavored nuts on top for an extra delicious crunch! Our favorite graze snacks on top of chili are Sour Cream and Onion Crostini or The Cheese Board.
