loaded sweet potato toast

We love sweet potatoes, but never thought about them as a breakfast food until our grazer Christine had the delicious idea to use sweet potato as toast! Not only do these look even prettier than regular toast, they offer more nutritional benefits and are a tasty, easy way to eat more fruits and vegetables.

sweet potato toasts


  • 1 large sweet potato
  • sliced avocado
  • 1 tbsp chia seeds
  • 2 tbsp almond butter
  • chopped chopped dates
  • chopped walnuts
  • hemp seeds
  • 30 g light Philadelphia
  • 1 tsp blueberries
  • pomegranate
  • raw coconut flakes
  • fresh grapefruit


You can peel your sweet potato if you like, or just wash and take off the wobbly bits.

Cut the sweet potato into slices just over half a cm thick and put into your toaster.

Toast on high twice making sure the whole slice is cooking, the result will be slightly browned sweet potato toasts!

Add the spread and toppings of your choice, can be sweet or savoury!

Fresh & fruity: coconut butter (DIY by blitzing coconut flakes), fresh blueberries & chia seeds

Energy booster: almond butter (DIY by blitzing almonds), walnuts, chopped dates & hemp seeds

Zesty & juicy: torn grapefruit, pomegranate seeds & raw coconut flakes

Easy avocado: sliced avocado, chia seeds & a drizzle of olive oil
