Preheat oven to 375 degrees F.
Combine dry ingredients into a large bowl and mix.
In a separate bowl, microwave the coconut oil for 30 seconds until liquid.
Add the egg to the coconut oil and whisk until smooth.
Add vanilla extract to the oil and egg mix
Gently pour the wet ingredients into the bowl with the dry ingredients and mix until it’s completely smooth.
Prepare a baking sheet with baking parchment.
Place a tablespoon of the cookie batter onto the sheet, allowing enough space for the cookies to spread.
Repeat until entire mixture is used.
Bake in the oven for 7-10 minutes until golden brown around the edges.
