For the orange and red tacos, coat the inside with a condiment of your choice, we suggest hummus, salsa or a lime yogurt combo. Layer on the sweet corn, spiralized carrot, beet chips and carrot chips.
For the green tacos, spread some mashed avocado on the inside, then layer with your 3 bean salad (ours is edamame, kidney and pinto), pomegranate seeds, sliced avocado, sliced radish and fresh cilantro.
Fold or roll and serve!
