easy vegan rainbow tacos

We're embracing spring with these delicious vegan rainbow tacos, full of tasty fresh ingredients like avocado, sweet corn and cilantro.

  • 4 soft taco shells
  • 1 spiralized carrot
  • 1 ear sweet corn
  • 1 graze beet chips
  • 1 carrot
  • 3 bean salad
  • pomegranate seeds
  • 1 ripe avocado
  • 1 sliced radish
  • cilantro leaves


For the orange and red tacos, coat the inside with a condiment of your choice, we suggest hummus, salsa or a lime yogurt combo. Layer on the sweet corn, spiralized carrot, beet chips and carrot chips.

For the green tacos, spread some mashed avocado on the inside, then layer with your 3 bean salad (ours is edamame, kidney and pinto), pomegranate seeds, sliced avocado, sliced radish and fresh cilantro.

Fold or roll and serve!
