Heat the almond milk, cream, vanilla extract, and honey in a pan until hot. Tip: Make sure to keep a close watch so it doesn’t boil!
Pour the mixture over chocolate and whisk until the chocolate is completely melted.
Add the 2 egg yolks to the mixture and whisk.
Blend the raw pistachio kernels and graze's dried not fried beet chips well and add to the chocolate mix. Optional: place 2 tbsp of the pistachio kernel and beet chip mix off to the side to use later for decoration.
Whisk well ingredients well and pour into soufflé dish.
Chill for 3 hours or until set.
Once chilled, sprinkle with the leftover pistachio and beet chips.
