Jess’s vegan hot chocolate with almond & coconut

This is the most perfect beverage for cozying up on the sofa with on a cold winter’s day or as a post long walk treat at the weekend or as a dessert huddled round the kitchen table.

If you’ve ever enjoyed churros dunked in melted chocolate, then this hot chocolate recipe will taste familiar, though it’s a much healthier experience! It’s hard to believe there’s no cream in this silky smooth drink and it’s all down to the almond and coconut milk.”

ingredients

  • 114 cup unsweetened almond milk
  • 134 cup coconut milk
  • 4 tbsp cacao powder
  • 5 pitted dates
  • 1 tsp ground cinnamon
  • 12 tsp vanilla seeds
  • 1 pinch salt
  • 1 bunch mini marshmallows

instructions

Add all ingredients (except marshmallows) to a blender and blend until you have a smooth consistency and the dates have blended. Add more water, if aiming for a thinner consistency (I like my hot chocolate quite thick).

Warm gently in a saucepan until heated through, stirring occasionally to prevent any clumping.

Pour into mugs, top with mini marshmallows and enjoy!
