Salads are a great way to shoot for 10 fruits and veggies a day! Vegan recipe creator and guest blogger Mairi shows off her three favorite salad recipes for summer.
I so love my big salads that if I don't have one for a day I really feel like I am missing out!
Lovely lunchtime salad with spinach, parsley, samphire, fresh figs, hemp seeds and olives from my graze box. Pomegranate molasses is my salad dressing of the moment! I love that stuff!
I literally threw this salad into my bowl today with no intention of photographing it but then I remembered I had made a new background board so had to show it off!
In the salad are mixed lettuce leaves, samphire, sprouted lentils, radish, strawberries, blueberries, hemp seeds and olives from my graze box.
This was my delicious lunch yesterday topped with veggie chips from graze.
The salad was spinach, rainbow chard and broccoli, carrot and beet chips, dried black beans and peppered almonds.
I made a dressing with 1 tbsp peanut butter, a splash of cider vinegar and a drizzle of agave.
