Hummus….if I could live off one food for the rest of my life it would be 100% hummus! I LOVE it but have had SO many failed attempts making it at home. This recipe is perfect, smooth and creamy and once you’ve made it once it’ll give you the confidence to make it again and again.
Add chickpeas, tahini, garlic, olive oil, lemon juice and cumin into blender and blend until totally smooth.
Taste and adjust flavour to your liking with lemon, salt and pepper.
Coarsely chop the fresh coriander and fold into hummus mixture.
Top with a drizzle of olive oil, some more chickpeas, coriander and a pinch of paprika. Enjoy with carrot and beetroot crisps!
