Put all the ingredients (apart from the olives) in a food processer and pulse until you have a smooth dough. Add more flour if it is still a little wet.
Tip the dough out onto a floured work surface and knead for a minute or so.
Divide the dough into 12 equal sized pieces and roll them out, stacking them between layers of greaseproof paper.
Heat up a griddle pan and until it’s nice and hot. Whilst the pan’s heating up, chop your olives and scatter them over the dough, before frying olive side up.
Cook for a couple of minutes on both sides, until you have a nice char.
Serve as soon as you can with a delicious dip like a homemade houmous.
