Pre-heat oven to 180C.
Boil 4 tbsp cinnamon in 200ml water and reduce down, then throw in a large handful of almonds and the juice from 1 lemon.
Toss in 1 tbsp honey with the zest from the lemon.
Tip out onto a lined baking tray and put into the oven for 15-20 mins, they should have a lovely golden brown colour.
