PB & J chia pudding

Try a healthy twist on an American classic with this delectable PB&J chia seed pudding! Layered chia seed pudding with peanut butter and fresh raspberries creates a truly tempting version of a PB&J sandwich. YUM!

  • 4 tbsp chia seeds
  • 250 ml unsweetened almond milk
  • 2 tbsp raspberry greek yoghurt
  • 1 tsp maple syrup
  • 4 tbsp peanut butter
  • 100 g raspberries


Mix together the chia seeds, almond milk and maple syrup in a mixing bowl. Pour into a container with a lid and refrigerate overnight.

Melt the peanut butter for 30 seconds until it is soft. Mash up the raspberries until they are a liquid. Layer half of the pudding into a cup or mason jar and pour half of the peanut butter into the cup. Top with half of the raspberry puree and repeat the process one more time.

Top with a crumbled apple cinnamon flapjack and some stars & stripes for an exciting flavour boost. Enjoy!
