overnight baobab oats

A great tropical vegan breakfast for preparing ahead, made with no refined sugar. Very simple baobab oats garnished with strawberries, pomegranate and pistachios.

  • 2 cup oats
  • 1 mashed banana
  • handful pumpkin seeds
  • 2 tbsp graze baobab powder
  • 112 cup almond milk
  • hemp seeds
  • 1 handful chopped pistachio kernels
  • pomegranate seeds
  • chopped strawberries


Stir together the oats, banana, pumpkin seeds, baobab powder, almond milk and hemp seeds. Store in the fridge for 2-3 days.

Serve with lots of tasty toppings - I chose strawberries, pomegranate and pistachios (and some super photogenic edible flowers).

  • lightly toasted pistachios multipack

    gently roasted Californian pistachios with a touch of salt
