Jess's rainbow toasts

Get your mornings off to the best start with these tasty breakfast toasts, each one a perfectly balanced source of nutrients to help support your active lifestyle.

  • 3 toasted wholegrain bread
  • goats cream cheese
  • 1 sliced figs
  • soft dried pear
  • 1 tsp honey
  • 2 tbsp peanut butter
  • 12 sliced banana
  • raw coconut flakes
  • 12 avocado
  • 12 lemon
  • sunflower seeds
  • 12 tbsp pumpkin seeds
  • chilli flakes


Take your first piece of toast and add the sliced goats cheese, fig and a drizzle of honey.

On your second piece, spread a layer of peanut butter and top with sliced banana and a sprinkle of coconut flakes.

And finally, mash and spread half an avocado over the last slice and sprinkle over pumpkin seeds, sunflower seeds and chilli flakes to taste.
