I used raw almonds and dried mini strawberries with some other ingredients to make a big batch of granola! I'm not the most wonderful of photographers but I thought I'd combine the granola with one of my favourite pastimes: drawing, to jazz up the photos a bit!

  • 2 tbsp coconut oil
  • 125 ml golden syrup
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 300 g rustic rolled oats
  • 20 g sunflower seeds
  • 100 g graze dried mini strawberries
  • 100 g chopped almonds

Preheat the oven to 150C/fan or 130C/gas 2.

Mix all the wet ingredients in a large bowl (oil, golden syrup, honey, vanilla extract).

Add the oats, sunflower seeds and almonds to the mixture and stir till all the dry ingredients are covered.

Tip the mixture onto baking sheets on 2-3 baking trays and place in the oven for 15 minutes.

After the 15 minutes, mix the granola around and then add the mini dried strawberries and bake for another 10-15 minutes.

After the granola has finished baking scrape it onto a tray to cool. In an airtight container the granola will keep for about a month.
