Melt the dark chocolate until smooth and stir in a handful of cacao nibs.
Add the rest of your ingredients to a blender or food processor and blitz until a grainy mixture is created - you can make this as chunky as you like!
Fill a silicon chocolate mould or ice cube tray with your mixture until each section is about ¾ full. Then fill the rest of the sections with the melted chocolate and cacao nibs.
Refrigerate until solid (or freeze to speed this up!) and then decorate your bites with cranberries, pumpkin seeds and whatever else you fancy!
