dark chocolate cherry tart pancakes

Top guest blogger Mairi's vegan pancakes with your favourite graze snack for a pancake day that will brighten even the coldest February.

  • 200 g plain flour
  • 200 g wholemeal flour
  • 112 tbsp baking powder
  • 50 g sugar
  • 12 tsp salt
  • 30 ml rapeseed oil
  • 600 ml almond milk
  • 2 punnet graze dark chocolate cherry tart


Mix together the flours, baking powder, sugar and salt in a bowl.

Make a well in the centre and add the oil and about 200ml of the milk.

Mix until smooth, adding a little more milk as you go.

When you have mixed in all the milk add the pecans, cherries and chocolate buttons.

Cook large spoonfuls of the batter in a lightly greased pan or pancake hot plate.

Flip over when the edges are beginning to set and cook until golden on both sides.

These pancakes are lovely on their own or with a drizzling of maple syrup.
