In a pot add the water, cashew milk, vanilla, salt and grated carrot and bring to a light simmer. Add the oats and simmer on a low heat for 7 minutes.

Add the pineapple and raisins, and simmer for 2-3 more minutes, or until it reaches your desired thickness.
