Guest blogger and vegan baker Shaliza shows us her carrot cake porridge, loaded with mango, kiwi, grapes, dried berries and carrot crisps for added crunch.

ingredients

  • 12 cup oats
  • 1 cup grated carrots
  • 1 cup cashew milk
  • 12 cup water
  • 112 tsp cinnamon
  • 1 tsp vanilla
  • 12 tsp salt
  • 4 tbsp maple syrup
  • 12 cup dried pineapple
  • 1 handful raisins

instructions

In a pot add the water, cashew milk, vanilla, salt and grated carrot and bring to a light simmer. Add the oats and simmer on a low heat for 7 minutes.

Add the oats and simmer on a low heat for 7 minutes.

Add the pineapple and raisins, and simmer for 2-3 more minutes, or until it reaches your desired thickness.
