Who would like some carrot and apple cake? This one is made with the new Apple and Carrot Defence - I used some of it in the cake and some for decoration. I absolutely love the wee carrot chews! They are so cute and of course they taste great too!
Firstly mix together the flax seed and water in a medium sized bowl and let rest so that the mixture can thicken. This is the binding agent in the cake.
Mix together the flour, baking powder, sugar, salt and spices in a large bowl.
Add the oil and milk to the flax seed mixture and mix well. Add this to the dry ingredients along with the grated carrot and apple and mix until everything is combined.
Finally add the contents of the Apple and Carrot Defence punnets and mix to combine. I reserved the Carrot Chews and Raspberry Chia bites for the decoration but if you are not icing the cake you may prefer to just add them to the mixture.
Bake at 180C in a lined 20cm cake tin for about 50 mins or until a skewer inserted in to the middle comes out clean. Leave to cool on a wire rack.
Using a mixer fitted with a paddle attachment mix together the cream cheese, icing sugar and vanilla on slow until combined and then turn the speed up and beat for about 30 seconds until you have a nice fluffy frosting.
Spread onto the cooled cake with a spatula and decorate with he Carrot Chews and Raspberry Chia Bites.
