Take a simple bowl and grains and use seasonal vegetables to upgrade it to this deliciously vibrant and nourishing meal, packed with protein, fibre, vitamins and minerals.

ingredients

  • 2 cup mixed grains
  • 1 grated carrot
  • 13 cucumber
  • 1 handful watercress
  • 1 sliced radish
  • fresh coriander
  • handful cashews
  • mint leaves
  • light soy sauce
  • 1 tbsp grated ginger
  • 1 red chilli
  • 12 lime

instructions

Cook your mixed grains and pour them into the bowl as a base for your buddha bowl creation.

Place your prepared vegetables in segments on top of the grains.

Combine light soy sauce, lime juice, chopped chilli and fresh ginger - this is your sauce.

Sprinkle the fresh herbs and cashews over the whole bowl, and drizzle with the sauce.

Enjoy as it is or mix it all together!
